The career path led his passion for cooking to many excellent kitchens, including those of The Ritz Carlton Hotel Company, The Willard Hotel, Gordon Restaurant, Rhapsody Restaurant, staging at The River Cafe, the University Club of Chicago, and finally as Executive Chef at Hinsdale Golf Club.

He is pleased to see the dream realized in the creation of de Quay Restaurant, an extension of his Dutch family heritage, and the melding of the long history between the Netherlands and Indonesia A native of Oak Park Illinois, Terry McNeese has over 20 years experience in Chicago fine dining restaurants.

Terry began his restaurant career at the Iconic Bistro 110 in Streeterville.

As the General Manager and Beverage Director of Le Lan Restaurant, Chicago Magazine’s best new Restaurant of 2004, Terry directed the wine program, receiving awards from the Wine Spectator and Wine Enthusiast.

As Director of Operations at the Gage , Terry opened the Gage’s Sister restaurant Henri, which received Three stars from the Chicago Tribune as well as being included in the top 25 new Restaurants in Chicago Magazine.
